We have an abundance of zucchini from just two plants grown in containers. Fried zucchini is one of my favorite foods.
Battering and freezing it ahead of time is easy. Just batter or bread the zucchini like you normally would and place it on a small baking sheet in the freezer. When it has frozen, toss it in a freezer bag.
I tried something similar with eggplant once, but did not do the baking sheet step. It was a disaster! I used waxed paper between layers and it all stuck together. So, be sure to freeze it on the baking sheet! You don’t need to cover it during that process.
