Leftover Roast Salad

When I make a roast, after the first meal, I cut up the remaining roast into bite-sized pieces and refrigerate in its juices. It makes a perfect addition to salads.

Fresh spinach leaves
Lettuce of your choice
Sprouts
Grated carrots
Sprouts
Leftover roast
Dressing of your choice (goes great with raspberry vinaigrette or ranch)

This also works well with leftover chicken. If you have both leftover roast and chicken, that’s even better!

  1. What type of sprouts go best with this? Would you use different sprouts with the chicken than you do with the roast?

  2. This is a very good way to use leftovers and save preparation time! When the tomato scare is over, I\’m going to add tomatoes to this salad.

  3. Shirley,I usually use alfalfa sprout because that\’s what I can get my hands on. Broccoli sprouts work well, too and they are very nutritious. I can\’t think of any type that wouldn\’t be good!
